It’s summer (almost) and summer makes ones thoughts turn to all thing BBQ. Even though I make my BBQ dishes indoors, I still love when they taste spicy, smoky and decadent. I’ve made a few BBQ dishes that I’ve posted here: Balsamic BBQ Seitan and Tempeh Ribs; Baked BBQ Tofu and Tempeh and Orange Balsamic BBQ Tempeh with Cheesy Polenta. I still need to share my recipe for Jamaican Jerk BBQ Sauce. But that day is not today.
Today I am sharing a simple but so flavorful BBQ recipe. I’m combining my two loves – BBQ sauce and Buffalo sauce and making one fantastic, knock-your-socks-off sauce. And since I’m using Beyond Meat’s Beyond Chicken Strips, I guess I’m combining 3 loves.
If you follow this blog, you know how much I love Buffalo sauce. I’ve made Buffalo Tofu Wings, Buffalo Tempeh Meatballs, Buffalo Soy Curls, Buffalo Tofu Po’ Boys, Buffalo Lentil Burgers, Roasted Buffalo Cauliflower Bites, and “Chicken” Fried Seitan Steak with Buffalo Vinaigrette. Told you – I love Buffalo sauce. So now it’s time for a Buffalo BBQ sauce.
Making BBQ sauce is so easy, no one should ever buy it again. You just mix ketchup, vinegar, something sweet and then anything else you like such orange or Buffalo sauce
It cooks up fast and it’s so much better than anything that comes out of a bottle. You can add Liquid Smoke for that extra smoky flavor if you want. This is a simple sauce made with ketchup, balsamic vinegar, apple cider vinegar, maple syrup, garlic, salt, pepper and…you guessed it, Buffalo sauce.
You can use anything as your vegan chicken – tofu, tempeh, seitan or any of your favorite products. This time I used Beyond Meat’s Beyond Chicken Strips. I like the lightly seasoned ones because I add my own seasoning anyway.
Just cook up the strips, pour on the sauce and let it caramelize a little in the pan. Sooooo gooood!!!
These were rich, spicy, decadent and spicy. And did I mention spicy? If you find it too spicy (and it’s too late to put less hot sauce in), you can always mix in a bit of vegan mayo to cool it down. But I like it spicy!
I served them with mashed potatoes and peas which is a comfort food favorite combo of mine. This sauce was so good, I wondered why I hadn’t combined the two before. This Vegan Buffalo BBQ Chicken dish will be a repeat performance all summer long. Enjoy!
Vegan Buffalo BBQ Chicken
GF
For the Buffalo BBQ Sauce
1 cup ketchup
1/3 cup maple syrup or brown sugar
1/3 cup balsamic vinegar
¼ cup apple cider vinegar
¼ cup hot sauce
3 garlic cloves, minced
1 tsp. black pepper
Kosher salt to taste
For the dish
1 tsp. garlic powder
1 tsp. chile powder
1 tsp. dried oregano
1 tsp. Kosher salt
½ tsp. black pepper
1 package Beyond Chicken Strips, Lightly Seasoned
1 Tbs. vegetable oil
To make the Buffalo BBQ Sauce: Mix all the ingredients in a small saucepan. Bring to a boil and then reduce the heat and let it simmer for 20 minutes until thickened. Taste for any seasoning adjustments. Keep warm until needed.
To make the Buffalo BBQ “Chieken”: In a small bowl, combine the herbs and spices. Rub the spice mix over the chicken strips. Heat the oil in a skillet over medium-high heat. Cook the chicken strips until browned on both sides, about 3 minutes per side.
Reduce the heat to medium. Pour some of the BBQ sauce into the pan and toss to coat the chicken strips in the sauce. Let the strips cook a few minutes until the BBQ sauce starts to caramelize. Serve with extra BBQ sauce and your favorite sides.
