Vegan Banana Bread with Fresh Pineapple and Coconut.

So, I had a few bananas on my counter, and a fresh pineapple that I had pre cut, and since there aren’t a whole lot of people around my house these days to eat all this food, I decided to bake. Surprise, surprise. I found this great recipe, made a few modifications… and here ya have it. Now off for a little Sephora therapy courtesy of my friend Lo. Vegan Banana Bread with Fresh Pineapple and Coconut.

2 Ripe bananas
1/2 C Fresh Pineapple chopped
1/4 C Homemade applesauce {use food processor to puree an apple}
1/2 C plus 2 tablespoons sugar
1 C all-purpose flour
1 C Whole Wheat flour
1 t. Baking soda
1 T. Ground cinnamon
1/2 t. salt 
1/2 C sweetened shredded coconut 

Preheat the oven to 350 degrees F. Lightly grease and flour a 9 x 5-inch loaf pan.

In a large mixing bowl, mash the bananas really well. Add the sugar, pineapple, and applesauce and mix well.

Sift in the flour, baking soda, spices, and salt. Use a wooden spoon to mix until the wet and dry ingredients are just combined.  Fold in the coconut.

Transfer the batter to the prepared pan and sprinkle with granola if your heart desires… {Check out my granola recipe here}. Bake for 45 to 50 minutes. The top should be lightly browned and a knife inserted through the center should come out clean.

Remove from the oven and let cool for 20 minutes before transferring out of a pan and onto a wire rack to cool completely.
