Veg Chow Mein Recipe

Another favorite recipe among the kids which is liked by adults too. This is a complete meal with nutrients coming from lots of vegetables and starch from the noodles.My daughter likes it alot and ask me to cook this almost every evening when she is back from her play park hungry. She doesn’t like eating vegetables with the noodles though but I make sure that she finishes everything in her bowl.
Prep time: 15 minutes
Cook time: 20 minutes
Serves: 4

Ingredients: -

  • 400 gm egg less noodles
  • Water to boil noodles
  • Salt to taste
  • 5 tbsp oil
  • 2 tsp garlic paste
  • 1 tsp chili powder
  • 2 cup thinly sliced vegetables (Capsicum, Carrot, Cabbage, French Beans)
  • 1 large onion finely chopped
  • 1 tsp soy sauce
  • 1 tsp Chili sauce
  • 2 tbsp vinegar

 Method: -

  • Boil water in a pot or a large sauce pan and add the noodles.
  • Add salt and cook noodles till it becomes soft.
  • Drain the noodles immediately and cool under running water to stop the further cooking.
  • Mix 1 tbsp of the oil into the noodles and keep aside.
  • Heat the rest of the oil in a fry pan or kadai.
  • Add garlic and onions to the kadai and cook till onions becomes transparent on medium flame..
  • Add the vegetables mix well and cook till it becomes tender.
  • Add the soy sauce, salt, vinegar and chili sauce and mix well.
  • Add the noodles and fry till it is mixed well with the vegetables.
  • Serve hot with Vegetable ManchurianPaneer chili or alone.
