I am a great lover of tuna and broccoli and casseroles! Casseroles are great to throw together on days when you are really busy and yet still want to make your family a delicious meal. My family always loved tuna casseroles. Tuna was one fish I never had much problem getting them to eat, in a sandwich, a salad or, yes . . . in a casserole! I am really picky about the tuna I use. I only use albacore tuna. Yes, I am a tuna snob!
That's why when I saw the September Degustabox, I got really excited! There was a tasty tin of Albacore tuna in it! Yum! Every month I am the happy recipient of a Degustabox. I love these boxes. Opening each one is a bit like opening a Christmas box. Always a surprise and always filled with things I want to try. Hand packed and cooked just once to retain the natural juices in the can. Please don't drain. Mix the Omega 3-rich juices into the tuna for added flavor and nutrition.
And this was the product I decided to highlight with a recipe. I love Albacore Tuna. An Italian woman once told me that it was the best and she was right! I love the white color and the taste of this tuna more than any other kind. It is mild and not really fishy if you know what I mean! I am not a huge fan of really strong flavoured fish! Salmon is about as strong as I go! Tuna is a lovely mild flavoured member of the oily fish family.
This tuna casserole is different in that it uses potatoes instead of pasta, although you could certainly use pasta twists or rigatini if you wanted to. This casserole is a great storecupboard meal. I used tinned cooked new potatoes, well drained . . . the tuna, a tin of condensed soup (I'm not a soup snob) and a few other bits. You could also use leftover cooked potatoes sliced if you wanted to. New potatoes are diabetic friendly so I always have tins of those in the cupboard, and we both love potatoes.
It also uses broccoli, which I just adore. Its one of my favorite vegetables and so good for you. I used frozen broccoli florets, but you can also use fresh, just blanch both first so you don't end up with raw broccoli in your dish. With some Dijon and strong cheddar cheese and it's potato crisp topping, this came out as a real winner!
*Tuna and Broccoli Bake*Serves 4Printable Recipe
Quick, easy and delicious. A simple casserole that makes good use of store cupboard ingredients.
200g tin of albacore tuna, drained and coarsely flaked (7 ounce tin)540g tin of cooked new potatoes, drained and sliced (19 ounces)(Can use the equivalent of boiled cooked potatoes, peeled and sliced)400g of broccoli florets, trimmed and blanched (3/4 pound)295g tin of condensed mushroom soup, undiluted (10 3/4 ounce tin)150ml whole milk (1/2 cup)150g strong/sharp cheddar, grated (1 1/4 cup)1 TBS Dijon mustardsalt and black pepper to tastesingle serve packet of salted potato crisps (potato chips)
Preheat the oven to 180*C/350*F/ gas mark 4. Butter a large shallow casserole dish.
Whisk the mushroom soup together with the milk and mustard in a bowl. Season with some salt and black pepper, remembering that the soup is a bit salty, so is the cheese, and the mustard is a bit hot. Be judicious as it is easier to add more at the table if need be. Fold in the sliced cooked potato, broccoli and flaked tuna, along with 3/4 of the cheese. Pour this mixture into the prepared casserold dish and spread out evenly. Cover tightly with foil. Bake in the preheated oven for 30 minutes.
Uncover and sprinkle the remaining cheese. Lightly crush the potato crips and sprinkle over top of the cheese. Bake for a further 15 minutes until golden. Let sit for 5 minutes and then serve.
Crusty bread is nice with this.
A salad on the side would also not go amiss! I really hope you will give it a go!
