With summer approaching, the team at Dalston’s underground cocktail hideaway, Ray’s Bar, has announced the launch of a brand new cocktail menu, available from Tuesday 16th May 2017.
Since opening its doors late last year, Ray’s Bar has quickly established itself as one of East London’s most popular late-night hangouts, offering cocktail lovers a dreamy subterranean hangout underneath the chaos of Dalston High Street.
The new menu’s imaginative cocktails are the result of a combination of light-hearted experimenting and thoughtful planning, drawing inspiration from Ray’s Bar’s neon haziness. When designing the new menu, Head Bartender, Dave Miller, focused on redefining modern classics using old school techniques; think natural clarification, milk punches and sherberts, with the end result being a menu that is both explorative and accessible.
Once again, the cocktails have been categorised into different sections to guide drinkers through their evening. Starting with Aperitifs, the cocktails are further separated into Mains and To Finish. The new addition of a fourth section – ‘The After Party’, sees guests being invited to extend their evening one step further with a whole new range of concoctions to sample.
The menu, which is brimming with pop culture references, is refreshingly diverse and purposely pleasing for a range of palates. From long and short concoctions to sweet and savoury flavours, many of the cocktails comprise unusual spirits from around the globe, including the likes of Fernet Branca, Umeshu and Cocchi di Torino, along with summery combinations of fresh and zesty flavourings.
