After many years of blogging about Trophy Cupcakes in Seattle and seeing the lovely cupcakes they bake, I finally got to meet Jennifer Shea last night. Jennifer is a mini book tour for the cookbook, Trophy Cupcakes and Parties: Deliciously Fun Party Ideas and Recipes from Seattle's Prize-Winning Cupcake Bakery. I totally agree with this cookbook theme because I truly believe that cupcakes are the champagne of desserts. Cupcakes are for celebrations, big and small.
Jennifer did a decorating demo for Easter cupcakes and answered some cupcake baking questions. One of her best tips is to take out cupcakes two to three minutes earlier than the baking time on the recipe. The cupcakes will continue while in the pan on the cooling rack. This is to prevent cupcakes from being overcooked. A dry cupcake is never good. Also, don't refrigerate cupcakes. Keep them out for two days, but if you want to save them for later, you can freeze them.
