Do you love salmon but are lost for ideas of what to serve with it? I thought I'd share some of my favourite toppings and accompaniments that I often use for a nice and tasty mid-week meal. Here is one to get you started, others to follow:
- Top salmon with a layer of sun dried tomato paste mixed together with garlic butter and finally top with wholemeal bread crumbs
- You can make your own garlic butter by grating lots of garlic into butter, mix together so nicely combined, roll into a sausage shape and wrap with clingfilm. Store in fridge and simply slice as and when needed.
- Or you can buy already made garlic butter
- You can always add fresh chopped herbs to this topping
- Cook salmon in oven for designated cooking time, I leave uncovered to allow breadcrumbs to crispen up
- I also like to add a few tasty cherry tomatoes in with the salmon when cooking to also have as an accompaniment
- Try serving with wholemeal rice or basmatti rice
- Or crushed new potatoes, with lots of fresh chopped parsley or coriander, squeeze of lemon juice, seasoning, splash of garlic olive oil, chopped fresh tomatoes mixed loosely together
