This is a super quick and healthy meal, which makes it ideal to cook mid week when you may have less time available to cook.

  • I have kept the salmon simple by cooking in a garlic butter.  I find the oven cook bags great for this. You can easily purchase your salmon from the fish counter and ask them to seal it in an oven cook bag and choose your desired flavoured butter to accompany it, which they pop into the bag. Or you can buy bags that you can put the fish into yourself.
  • Place the fish in the oven and cook according to the guidelines on the oven cook packet 
  • Meanwhile cook up some new potatoes. Once cooked simply drain and return to the saucepan. Add a little fresh chopped chilli, large hand full of chopped fresh coriander, 2 or 3 chopped and cored fresh tomatoes, a squeeze of lemon juice, a drizzle of garlic olive oil and some seasoning.  Then stir and crush the potatoes with back of a fork.
  • Steam some green beans. I microwaved mine in the pack they came in (just pierce bag with a knife and pop on for 2 mins)
  • Ready to serve
