Tofu bhurji or scrambled tofu is one of the best nutritious dishes, which can be made in a jiffy and tastes great. Tofu or bean curd is a food made from coagulating soy milk and then pressing the resulting curds into soft white blocks. Tofu is rich in protein, calcium, low in calories and a vegan substitute for paneer. It also provides fats, carbs, and a wide variety of vitamins and minerals. Those with lactose intolerance can add tofu to their daily diets to meet the calcium and protein needs.

Tofu can be added to diet in various ways. Even though Tofu ‘s taste is bland it becomes extraordinarily tasty after absorbing the seasonings. Our Tofu bhurji or scrambled tofu can be paired with chapati, paratha or bread and served for lunch, brunch or in lunch box. I have served it with multi grain bread to make the meal wholesome.
Tofu Bhurji / Scrambled Tofu
Ingredients:
- 250 grams tofu
- 1 onion finely chopped
- 1 tomato finely chopped
- 1/4 cup green peas
- 1/4 teaspoon turmeric powder
- 1 teaspoon black pepper powder (adjust as per taste)
- 2 tablespoon oil
- Small bunch of fresh coriander leaves.
Method:
1. To begin with, rinse the tofu block in fresh water well. Pat it dry using tissue paper or a clean kitchen towel.
2. You may grate the tofu, I have chopped it instead.
3. Heat oil in a pan or wok. Add onions to it and saute for 1-2 minutes. Next tip in tomato and green peas. Stir fry the veggies for a minute or so. I have used frozen green peas so they cook quickly. If using fresh green peas. Cover cook until the peas cook well.
4. Now add turmeric followed by chopped or scrambled tofu and mix well. Stir fry for another 1-2 minutes and cover cook for 2-3 minutes more.
5. Lastly add freshly crushed black pepper and garnish the tofu bhurji with finely chopped coriander.
6. Serve the delicious tofu bhurji with your preferred flat bread. I have served it with multi grain bread.
Note: Tofu can be introduced in a baby’s diet after 8-9 months of age and not before that. Also babies with soy allergies should not be given tofu.
