Three Minute Veggie Dinners: Amy’s Kitchen

Not matter how much I love cooking, there are days when I just don’t want to cook. Long stressful day at work? Nope, cooking isn’t happening. Just got back from holiday or a weekend away? Doesn’t matter if I’ve been eating in restaurants for days, not so much as picking up a wooden spoon.

How do you cope with days like that? I love keeping my freezer stocked with leftovers (even if I’m not always that on the ball about labelling them up…) and I’ve shared a couple of fantastic vegan and vegetarian food delivery services on here before, such as Soulmate Food and Give Kitchen. But the thing I actually find much harder is needing to grab something from the shop that doesn’t require much input from me but also isn’t packed to the rafters with salt, sugar and the like..

With all this in mind, I want to try to share with you more of the widely available, decent options out there that do exist – starting today with Amy’s Kitchen.

Amy's Kitchen Vegetarian, Vegan & Gluten-free Range

One of the first surprises for me in exploring Amy’s Kitchen is how long they have been around, yet how new they are to me! Amy’s Kitchen launched in the US in, wait for it, 1987 – making it almost as old as I am! The mission of Amy’s Kitchen is perfectly summed up as ‘providing convenient and tasty natural vegetarian meals for people like ourselves, who appreciated good food, but were often too busy to cook “from scratch.”‘

These days they have a huge range of frozen and tinned products available – perfect for keeping in the freezer or cupboard just in case. Absolutely all of their products are vegetarian and a good number of meals are gluten-free and/or vegan too and very clearly labelled as such. Of the six products from the range that my local supermarket stocked, three were vegetarian, three were vegan and all six were gluten-free.

Amy's Kitchen Rice Mac & Cheese

Overall, I was really impressed with all of the meals I tried – the gooey cheese sauce of the rice mac & cheese was a definite winner and the creamy cashew sauce on the chinese noodles and veggie was a creative vegan option – and can safely say they’ll be one of my first choices next time a lazy or busy day strikes!
