One of the things my ex and I used to love to order when we went to our favorite Diner was a Turkey Club Sandwich.  It would come to the table so tall and stuffed you could barely finish it.  Always with a side of fries and coleslaw to die for.

The food would practically be hanging off the plates, and it would be sooooooo good!  Diner food is always incredibly delicious and fattening, but we won't talk about that will we.

Thinking back I can't believe that we each used to polish off one of these sandwiches with all of the sides no problem.  Thinking about it now makes me break into a cold sweat.

There is no way that I could eat a whole one of these along with coleslaw and fries. No way.  Its true folks, your appetite does decrease a great deal as you get older.

Or maybe you just get smarter about things like this  . . .  and use caution.  Either way there is no way I would or could eat a whole one of these.

That doesn't mean I have to take Turkey Club Sandwiches off our menu however.  We can still enjoy those layers of turkey, cheese, bacon, tomato and lettuce with plenty of mayo  . . .

We just eat half a one now instead of a full one, and let me tell you  . . .  that is plenty!

You can be semi-generous with the fillings when you know you are only going to be eating half a sandwich.  You really can.  I had some lovely fresh ripe tomatoes to use, and deli turkey, as well as some bacon that I wanted to cook.

It all just sang Club Sandwich to me!  Normally I would have whole wheat bread, but because I was sharing this with Todd, I deferred to his taste and used white bread.

I accompanied it with some oven sweet potato wedges that I made myself.  I just cut a large sweet potato into wedges and roasted them with a bit of oil and some seasoning in a hot oven until they were crispy and golden brown.

Easy peasy and oh so tasty.  I don't know how the restaurants get sweet potato fries so crispy, do you? I never can, but then I never deep fry them either so maybe that is the secret.

When I was in Salt Lake City a few years back, Lura and I had lunch in the Roof Top Restaurant of the Joseph Smith Building.  I remember having fried pickles and the best sweet potato fries I have ever eaten.  I can't remember what else I had, but it obviously paled in comparison with the pickles and the fries, which I have never forgotten!

In any case if you are looking for a tasty sandwich for two that will please you both, do try this.  I use real cheddar cheese, not the phony plastic stuff.  Its fabulous!

Author: Marie RaynerThis is actually one big sandwich, which feeds the two of us perfectly. If you are a really hearty eater, it might only serve you.  Either way it is delicious!

Ingredients:

  • 3 sliced of sturdy white bread toasted
  • 1/2 pound of shaved deli turkey
  • 6 rashers of streay bacon cooked until crisp and drained
  • 1 ripe tomato, thinly sliced
  • 2 slices of strong cheddar cheese
  • 4 TBS good quality mayonnaise
  • a handful of shredded romaine lettuce
  • salt and black pepper to taste

Instructions:

  1. Place one slice of toasted bread on a cutting board.  Spread with 1 TBS of mayonnaise.  Top wih a layer of shredded lettuce and then the sliced tomato.  Season the tomato with a bit of salt and a healthy grind of black pepper. Lay the bacon rashers on top of the tomato. Spread 1 TBS of mayonnaise on top of another slice of toast and lay this mayo side down on top of the bacon.  Spread 1 TBS of mayonnaise on top of this.  Top with a layer of shredded lettuce. Layer on the sliced turkey, season with some black pepper and then add the sliced cheese.  Spread the final slice of toast with the remaining TBS of mayonnaise and place mayonnaise side down on top of the cheese.  Press down lightly. Cut in half and serve immediately with your favorite sides.

What is your favorite kind of Diner Food?  They don't have real Diner's over here and the ones that they claim as Diners are only pale imitations of the real thing, with incredibly over-priced food that is quite disappointing. I am not sure why they can't get it right, but they just don't.
