The Curious Case of the Bean-jamin Button Burger

Yes, that was my horrible attempt at a bob’s burger, burger name.  The name might not be great, but this burger sure is.  Made with kidney beans, mushrooms and onion, this vegan burger is a sure win with meat eaters.

I just can’t get over my silly burger name so to avoid my embarrassment, I will roll on to the recipe. Now I feel like I’m being punny :P

THE CURIOUS CASE OF THE BEAN-JAMIN BUTTON BURGER – 6 servings

Ingredients

  • 1 can red kidney beans, drained and rinsed
  • 1 onion, finely chopped
  • 1 package white button mushrooms, finely chopped
  • 4 cloves garlic, chopped
  • 1/2 cup oats
  • 1/2 cup bread crumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tsp soy sauce
  • 1/4 cup nutritional yeast flakes
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • 1 flax egg
  • 1 tbsp olive oil

Directions

Heat the olive oil in a large skillet. Add the onion, garlic and mushrooms.  Cook and stir until the liquid from the mushroom evaporates. Take off heat and set aside.

In a large bowl mash the kidney beans well.  Stir in the remaining ingredients until well combined.

Cover the bowl in plastic wrap and let sit in the fridge for an hour.

Divide the mixture into 6 equal parts and shape into burger patties.  Heat a little oil in a frying pan and fry each side until golden brown.  Serve on a burger bun with your favorite condiments.

Its been so unbelievable hot here and I just really want to never use the stove again, it seems it will be a raw summer for me.  Happy Tuesday.
