It's kind of both. Your red cabbage, full of nutrition, has these powerful compounds called anthocyanins. That's what gives this amazing veggie its brilliant purple color.

It's a great source of vitamin K and gives you small amounts of calcium, magnesium, and zinc.

Dressing for Coleslaw
This dressing for coleslaw, if you can call this salad 'coleslaw' is simple. You have the option of adding about three tablespoons of avocado oil based mayonnaise. It adds a touch of creaminess to the dressing.
Why should you use avocado based mayo? Well, it's complicated, but here's why I do. And, it's a pithy explanation. My goal with food is to look for small ways that I can create more nutrition and improve my health as I mature. You certainly can and will make your choice.
"Using avocado oil ensures that the mayo is filled with what are considered good, healthy fats (the monounsaturated ones). And of course eggs are another key ingredient for avocado mayonnaise that's a keto- and Paleo-favorite dietitians love. "Eggs contain all the essential amino acids your body needs."
Turkish Red Cabbage Salad
Another great way to use your purple or red cabbage is with a simple Turkish red cabbage salad.
It's fabulous and great as a side dish. Top on tacos, hot dogs and more.
Here's what you do:
- Slice about half of a head of red cabbage very thin.
- Put about 4 tablespoons of olive oil in a zip lock bag, add about one teaspoon of salt and juice of one lemon.
- Optional: One teaspoon of sugar. You can also add chopped flat parsley and swap lemon juice and use red wine vinegar, about 2 tablespoons.
- Add the sliced cabbage to the bag. Toss and blend. Refrigerate.
- Serve this cabbage with other things like pepperoncini, cucumbers, pepper slices, and more.
