Tasty Vegan Potato Omelet

Vegan Potato Omelette

INGREDIENTS:

  • 2 tablespoons of olive oil
  • 5 scallions, chopped
  • 6 ounces of potatoes, boiled, cubed
  • 2 tablespoons of parsley
  • 1/2 cup of sour cream
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper, ground
  • 2 eggs

DIRECTIONS:

In a bowl combine, potatoes, scallions, salt, Dijon mustard, eggs and black pepper. Mix together.

Heat oil in a pan, add potato mixture and fry for lo minutes until eggs are cooked.

Take out in platter and top with sour cream.
