Taco Stuffed Peppers

But I will say, I did burn the first batch of these ha! Opps! Hey it was my first time attempting to make these so, we'll just blame...I guess me. I also had a bit of convincing  to do with my husband who said his Mom made it a lot growing up as a kid and he never enjoyed it. However, he did welcome the chance to try it again just for my sake! Phew!
These were seriously so easy to make and have a lot of ingredients I already had in my pantry! #Winning! A few ingredients I didn't have, I just went to my local Publix to grab. Thank goodness they truly have everything I need- especially when it comes to my main ingredient, fresh bell peppers.
Taco Stuffed PeppersI chose my bell peppers from Fresh From Florida. They were perfect! Crisp, ripe and full of flavor. I knew I wanted to create something flavorful, easy and of course, delicious for my family so stuffed peppers were on the menu and I must say, they did NOT disappoint. I've always loved shopping from Fresh From Florida because their produce can't be beat! The farmers work hard year round just to make it easy for everyone like our family to eat high-quality produce. It's seriously such a bonus! I've written a few other posts here and here too! 
Taco Stuffed PeppersThese taco stuffed peppers were filling and full of so much great flavor that I actually grabbed another one! My daughter scarfed hers down and my 10 month old even said a few 'mmmmm' sounds after having a few bites. Basically, it's a win all around our table and I'm sure it will be around yours too! Here's how I made them!
Taco Stuffed PeppersIngredients:
  • 6 large Fresh From Florida bell peppers, any color
  • 2 cups wild rice, cooked
  • 1 lb. 93% Lean ground turkey
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 16 oz. jar crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 tablespoon olive oil
Instructions: 
  1. Preheat oven to 350 degrees. Prepare your rice and set aside. You will need two cups of cooked rice.

  1. Cut off the tops of the peppers remove the seeds, trim the bottoms to help them sit flat in the skillet and rinse thoroughly. In a large pan boil the peppers for 5 minutes, remove from water and turn upside down onto a paper towel to dry.

  1. In a large skillet add the olive oil, garlic and onion, saute until tender. Add the ground beef and brown until thoroughly cooked.

  1. Add the crushed tomatoes, rice, Italian seasoning, salt, pepper and 1/2 cup of the shredded cheese and stir until blended.

  1. Fill the peppers evenly with the mixture, place in a lightly greased 10 inch cast iron skillet, or baking dish of your choice. Bake uncovered for 25 to 30 minutes. Remove and add the remaining cheese to the top of peppers and bake for an additional 5 minutes or until the cheese is melted.
