While I’m glad that he likes some dish with vegetables, eating out every day isn’t a practical way to do it – nor is it healthy! So, the obvious solution is to make it at home, and while you’re at it, you might as well add some more veggies to it! Check out this Sweet Corn Vegetable Soup for toddlers, that can also be given to babies over 9 months.
Sweet Corn Vegetable Soup For Toddlers
Ingredients :
- 1/2 cup boiled sweet corn kernels.
- 1 small onion finely chopped
- 1 carrot finely chopped
- 2-3 french beans finely chopped
- 1 teaspoon butter
- 1/4 teaspoon black pepper powder
- Salt to taste (optional)
Method :
1. Boil the sweet corn kernels in a microwave or on the stove. They can also be steamed in a pressure cooker. Transfer to a grinder jar.
2. Pulse the boiled kernels to a fine puree. You can add a little water if it looks too dry.
3. Melt butter in a sauce pan. Add the chopped onion and saute till soft.
4. Toss in the remaining vegetables and fry till done.
5. Add 2 cups water and let it come to a boil.
6. Stir in the sweet corn puree. Let the mix cook for 4-5 minutes on a low to medium flame.
7. Lastly season the soup with salt and pepper . Stir and cook for another minute. Avoid salt if the soup is for babies under one.
8. Turn off the flame. Serve warm.
