Since the weather has been absolutely beautiful in Dallas lately, I thought it would be fun to put our backyard to good use and take lunch outside. I am not going to lie, I have never actually made my own picnic but I feel like I have seen enough that it couldn’t be too terribly difficult. Luckily, we like to keep our fridge extra stocked so I just pulled out a sandwich, threw a salad together and made little parfaits for dessert.

Now, we all know that besides the company, the next most important thing at a picnic is a cocktail of some sort. I really couldn’t decide what sounded tasty, so I decided to take my mini mixology skills that I have learned from partnering with Kahlua® the last couple of months and create something that was based upon the classic Kahlua Mind Eraser drink. By adding a few different yet tasty ingredients to the classic Kahlua cocktail I was able to create a delicious summery cocktail. You guys, I am not even kidding this cocktail is absolutely refreshing. Oh and make sure to drink it through a straw so you really taste all the layers…you’re welcome!

-1 part Kahlua®

-1 part absolute vodka

-1 part club soda

-1 part champagne

-1 splash of pineapple juice

-1 strawberry

-1 red & white striped straw

Fill glad with ice. Pour Kahlua® into the glass. Pour vodka into the glass. Add splash of club soda. Add splash of champagne. Add splash of dole pineapple juice. Place strawberry on the side of glass. Place straw in glass. Sip through straw and enjoy!
