I ate this dish at my cousin's place while visiting him last month. So today I shall replicate it.
The perception of bitter gourd is bitter and my hubby used to not liking it. But these days, he is slowly taking into it.
I tried this method of removing the bitterness and it works perfectly. Not even a hint of this bitter taste. Perfect.
This Stir-fried bitter gourd with black bean dace fish will be our favorite from now on.
What you need:
1 bitter gourd1 tbsp oil1 tsp sugar1 can of black bean dace fish2 tsp minced garlic½ red capsicum, cut into bite-size
1 tsp oyster sauce1 tsp cornstarch6 tbsp water
Method:
Cut bitter gourd lengthwise and remove piths and seeds. Slice.
Add some salt and rub them thoroughly. Set aside for 10 mins. Rinse.
Open the can of black bean dace fish. Remove bones and cut them into small bite sizes. Set aside.
Bring a pot of water to a boil, add oil and sugar.
Add in the bitter gourd and blanch for a few mins. Drain.
In a wok, add oil and fry the garlic until fragrant.
Add in the bitter gourd, dace fish, red capsicum and stir fry until fragrant.
Add in the starch slurry and cook until thickened.
Serve.
