What you need:300g aubergine (cut into chunks)4 tbsp corn flour1 tsp salt3 tbsp oil2 tbsp minced garlic1 med onion, slice1 tbsp chilli flakes2 tbsp soy sauce1 tsp sesame oilMethod:Coat the aubergine with corn flour and salt.In a pot of hot oil, fry the aubergine until golden brown. Set aside.In a frying pan, saute onion and then garlic.Add in the fried aubergine. Add in chili flakes. Stir well.Add in soy sauce, sesame oil and stir well.Add in coriander leaves and stir well.Enjoy!
