So, let's talk football. My family is obsessed. College football on Saturday, NFL on Sunday, Monday and even Thursday sometimes. High school football on Friday nights, fantasy football leagues everywhere I turn, and pick-up games of catch before and after Sunday dinner.
Now, I like football as much as the next person (ok, well maybe a *tiny* bit less), but I have to say that I get more excited about the football parties and the tailgating than I do the actual games. And right at the top of my favorite football food is the famous Queso dip. For something that's so quick and so easy (just two ingredients!) it's always a hit. I love it because it's also a versatile recipe, just a couple ingredients more and you have an awesome Spinach Queso dip.
If you haven't ever had Queso dip, it's really that easy. Combine VELVEETA and RO*TEL (diced tomatoes and green chiles) and heat them in the microwave until the VELVEETA has melted. It takes just about five minutes. Easy.
Today, I added some cream cheese and frozen spinach, and it was a huge success. We like it with tortilla chips in our house, and sometimes put it in the crock pot to keep it warm during our parties. - 1 lb. (16 oz.) VELVEETA®, cut into ½-inch cubes
- 1 pkg. (8 oz.) cream cheese, cut up
- 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, drained
- Place spinach in large microwaveable bowl.
- Microwave on high for 5 minutes.
- Stir in remaining ingredients.
- Microwave on high for 5 minutes or until VELVEETA is completely melted and mixture is well blended, stirring after 3 minutes.
- Serve hot.
