Smooth and Creamy Cauliflower Pasta

Its been raining here for weeks! We’ve been having serious storms here, but its just the typical  summer in KZN.

It would all be fine and dandy if I wasn’t petrified of thunder! You would think I would be scared of the lightning, but o no, I’m scared of the thunder! I’m not a big fan of loud noises! Other odd things I’m afraid of include: Frogs, clowns, heights and ships.  Now to pretend I didn’t type any of that and get straight to the recipe.

 

I love pasta, its such an easy thing to make doesn’t require endless prep work and can be ready in minutes.  What I love more than pasta is healthy pasta sauces that won’t have me feeling guilty about going back for seconds.  This is a deliciously smooth and creamy sauce  , I added in some carrot for extra goodness, but feel free to leave it out or add in more veggies.

 

SMOOTH AND CREAMY CAULIFLOWER PASTAserves 3 – 4

Ingredients

  • Wholewheat spiral Pasta – enough for 4 people
  • 1 small head of cauliflower, cut into florets and steamed
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 cup vegetable stock
  • 1/2 cup milk ( add more if you want a thinner sauce)
  • 2 tsp Dijon mustard
  • 2 tsp  dried basil
  • salt and pepper to taste
  • 1 large carrot diced

Directions

Cook the pasta according to package directions.

Steam the cauliflower until soft.  

In a blender add the cauliflower, vegetable stock and milk. Puree until smooth.

In a small sauce pot add the oil, onion and garlic and cook until translucent.  Add in the cauliflower puree and stir.

Sir in the mustard, basil, salt and pepper.  Taste and adjust seasoning.  Add in the carrot and lower heat.  Simmer for 5 -10 minutes.  

Add pasta to sauce and toss to coat.  Serve immediately.
