Slow Crockpot Pulled Pork

My hubby loves pulled pork sandwiches.  

This is a very versatile item to have at home.  Either served as a burger or a sandwich, add to pasta or go with rice.  All equally delicious.One of the easiest way is to use a bottle of BBQ sauce and a can of tomato sauce and voila you get a yummy dish but since I try as much as possible not to use processed condiments in my food, so I needed more work but hey, if you are making a big pot, I guess it is worth the effort.  After all, this is home cooked.

To save time and energy, I used the slow crockpot to do the job.  Easy Peasy.


Slow Crockpot Pulled Pork

What you need:

2kg pork shoulder2 tsp minced garlic1 medium onion, finely chopped2 dried bay leaves8 tomatoes with seeds and skin removed, chopped finely
1 tbsp tomato paste1/8 cup dark brown sugar1 tbsp Dijon mustard1 can of stout beer¼ cup apple cider vinegar1 tbsp worchestershire sauce2 tsp salt½ tsp pepper½ tsp cayenne pepper
Method:
In a 5- to 6-quart crockpot, combine all ingredients together.
Sear pork in a hot pan and add pork to crockpot and turn to coat completely.
Cover and cook on medium until meat is pull-apart tender, about 8 hours.
Transfer pork to a bowl; shred with two forks. Return pork to pot, and toss with sauce.
Discard bay leaves.
Serve pulled pork with bun and salad.
Enjoy.
