Shakshuka

I wanted to cook this for the longest time since I am leaving for a short break and need to clear the tomatoes, so it's perfect timing for Shakshuka.
Shakshuka
Findings: So easy and yet so flavourful.  Totally love it.
What you need:Serve 3
1 medium onion, diced1 Bell pepper, seeded and diced4 cloves garlic, finely chopped1 can peeled tomatoes or 6 fresh tomatoes
2 tsp paprika powder1 tsp cumin powder¼ tsp chilli powder
4 eggsSalt and pepper to tasteChopped cilantro and parsley
Method:
Saute the diced onion and bell pepper with a little olive oil over medium heat (about 5 mins).
Add in garlic and spices and stir until fragrant.
Add in the tomatoes and once it starts to lightly simmer.
Spread the mixture evenly and make 6 holes  
Place the egg gently into each hole.  Reduce the heat to low and cook for 8 mins or until eggs are done to your liking.
Season the eggs with salt and pepper.
Garnish with fresh herbs.
Enjoy!
