Yes, tailgating is great. It's camaraderie. It's great food. It's excitement and loyalty. But, who says it can't be done right in your own living room where you have a prime seat watching the big screen, a comfy sofa, wine, a fireplace crackling and the cat purring and sleeping on her pillow next to it!
In our house, we call this 'coffee table-gating'! Yes, it's chic sports cuisine served up on the coffee table complete with candles, silverware, special plates and lots of great nibbles and eats. Here's a quick and easy recipe for sesame chicken drumettes. It'll serve two maybe three people because, yep, they're that crispy juicy tender and good.
Plus, with only some spices coating them and roasted in the oven, they're basically naked chicken drumettes that you can't stop eating. And, served with a vibrantly fresh salad, you don't feel guilty at all eating your half dozen or more!
Makes: 12 drumettes
Preheat oven to 400
What you need:
12 chicken drumettes
Canola cooking spray
1 tsp. sea salt
1 tsp. coarse ground pepper
1/2 tsp. garlic granules
1/4 tsp. onion powder
1/4 tsp. smoked hot paprika
2 tsp. sesame seeds
What you do:
Rinse and pat dry the drumettes. Line a cookie sheet with parchment paper. Put the drumettes on it and coat well all over with cooking spray.
In a small bowl, combine the salt, pepper, garlic, onion powder and paprika. Sprinkle on both sides of the chicken. Give a light coat of cooking spray and sprinkle both sides with the sesame seeds.
Roast in a preheated 400 oven for about 20-22 minutes. If you want your chicken more golden brown, turn to broil for the last about 90 seconds. Remove, cover with foil and let the chicken rest about 5 minutes.
