Savvy’s Healthy Vegetable “Fried” Rice

I love the fried rice that comes with Chinese takeout, but I DON’T love the high calorie and sodium count. So I played around with a a few recipes until I came up with Vegetable “Fried” Rice Recipe. (It’s more of sauteé really). It’s great with leftover rice and the ingredients are crazy cheap! I’ve eaten this as a main dish as well as a side dish. This recipe cooks up quickly if you cook the vegetables and the egg ahead of time. Let me know what you think?

Savvy’s Healthy Vegetable Fried Rice (serves 4)

Ingredients:

  • 1 cup cooked rice (I like jasmine or basmati, but use whatever you have on hand)
  • 1 tbsp sesame oil
  • 1 tbsp butter
  • 1 small onion(or half of a large one)
  • 1 clove of garlic
  • 1 egg scrambled
  • ¾ cup frozen mixed vegetables
  • 1 tbsp rice vinegar
  • 2 tbsps low sodium soy sauce
  • 1 tsp garlic powder (optional)
  • 1 tsp onion powder(optional)
  • 1tsp chilli powder
  • ½ tsp sugar

Directions:

Boil vegetables as directed until soft but firm. While boiling, chop onion and garlic (or use a garlic press) and sauteé in a saucepan over medium heat with butter until onions look clear. Drain vegetables thoroughly. Lower heat and add sesame oil to the pan and stir, then add rice, vegetables, egg, soy sauce and vinegar to the pan and coat everything evenly. Next add your spices and sugar and sauteé again until all ingredients are mixed well. Cover and simmer for 20 minutes then serve hot.
