Purple Japanese Sweet Potato

I can go on and on about how healthy it is and the nutrition, but let's look at using purple sweet potatoes!

Yes, they're a great source of beta-carotene and even richer source on anthocyaninn pigments. In order words, mega antioxidants that can help reduce inflammation. Plus, fortify your immune system.

These purple lovelies have more anthocyanins than the average blueberry!

What to Make with Purple Sweet Potato

Hopefully, you can find these purple beauties. I source them from my local Asian market. So, by all means, check to see if yours carries, and if not, ask them about it!

There are so many things you can do with these sweet potatoes including just baking and enjoying like regular sweet potatotes. But, you'll need to bake them longer in order to get the maximum flavor.

The key to getting maximum flavor and color from a Stokes Purple® is to bake it longer than you would a regular sweet potato and at moderate heat, about 90 to 120 minutes at 350 degrees, at which point it becomes pleasingly moist.

Look for the Okinawan sweet potato in your grocery store in the fall and winter seasons. Unlike its darker skinned counterpart, the tubular-shaped Okinawan sweet potato has a buff or light brown colored skin with a violet-purple flesh. This tuber has a slightly sweet taste and a creamy texture, lending itself to the same recipes you would use with orange sweet potatoes.

Now I've peeled mine. But, if you like, you can scrub really really well with a wire brush scrubber, leave the skin on and then put in a bowl (whole) with a little water. Cover and microwave about 5-7 minutes, then remove, cool and dice into bite size pieces.

These sweet potatoes are worth all the work because of their fabulous nutrition. Antioxidants and dietary fiber galore!

Now the Brussels sprouts have a tad bit of 'bitter', at least for my palate.

To round that down and help, we'll be putting a healthy drizzle of the best maple syrup you can source. I love the vanilla infused from Costco. You get a big jug of it very reasonably priced.

Speaking of sausage and Costco, I'm using these grassfed Teton sausages from Costco, too.

They come in packages of 12, and I buy a couple of them when they're on sale. Such a bargain. You can freeze.

These are the only sausages I'll use for hot dogs, too! And, with my dill pickle grassfed chili, well, it's a dog off the charts!

Japanese Sweet Potato Recipes

These purple beauties are known as Japanese sweet potatoes. They are mildly sweet. And, you might even get a hint of a wine-like taste.

They're more dry and starchy than traditional sweet potatoes. And, it's for these reasons that we have to cook them longer than the orange or white sweet potato.

Purple sweet potatoes have a lemony citrus hint and subtle flavors of herbs. They have an aroma molecule called 'linalool' that's also present in coriander seed and cilantro. That's why we're infusing the oil with some herbs before we start cooking.
