Salmon Souvlaki Skewers with Feta Yogurt Sauce : a simple and delicious dinner that comes together in 30 minutes!  Salmon, bell peppers, onions and lemon slices are grilled up and served with a creamy feta yogurt sauce and pita wedges.

I kind of want to call this the summer of the barbecue.  And the summer of the skewers.  Because there has been a TON of barbecuing happening here, and ever since we got these cool metal skewers (^), we’ve been throwing more than just some shrimp on the barbie

Part of the reason for the massive amounts of barbecuing we’ve been doing (other than less dishes to wash!) is that it has actually been quite warm here, and Ben is slightly crazy about keeping the house warm.  Translation: I’m not allowed to turn on the oven.

The other day, I told him I have to bake some cookies for the blog.  He actually asked me if I could cook them on the BBQ, I kid you not!  I’m actually kind of curious…will it grill?  (Now I’m thinking that I should create a new blog series called ‘Will it Grill?’…ha ha ha!)

Anyway, grilled cookies aside, these salmon skewers were the latest thing to be skewered and grilled.  And I just can’t get over how easy they were to prepare and how delicious they were to eat!

These salmon skewers are so simple…bell peppers, lemons slices, red onion, and salmon cubes on a skewer, showered with pepper, and grilled up.  The magic to this dish is in the sauce…a yogurt and feta sauce with a touch of garlic and lemon.  That sauce brings a TON of flavor to the skewers.

So.  A simple and easy oven-less recipe that is ready in 30 minutes.  And it’s healthy for you!  And there’s almost no dishes!

Simple is almost always better in my book.  What do you think?
