Ingredients: Serves 2~3 Russet Potato - 1 large Red or White Onion - 2tbsp, finely chopped Egg - 1, hard boiled (optional) Carrot - 3tbsp, diced and cooked Peas - 3tbsp Dill pickles - 1, chopped Mayonnaise - ¼cup (or use 2tbsp each of mayo & sour cream)
Salt & Pepper - to taste
Method:
- Boil potatoes until fork tender. I pressure cooked mine for 2 whistles. Peel and chop into ¼"~½" pieces.
- Combine all the ingredients and mix well until combined. Serve!!
