Recipe adapted from here. Ingredients: Serves 2~3 Ripe Tomato - 1 medium, chopped Cucumber - 1 medium, chopped Red or white onion - 1 small, thinly sliced Olive Oil - 2tbsp White Vinegar - 1tbsp Salt & Pepper - to taste Scallions - 2, finely chopped
Method:
- In a small bowl, whisk olive oil, vinegar, salt and pepper.
- In a small mixing bowl, combine tomatoes, cucumber and onion. Stir in the dressing and garnish with chopped scallions (if desired). Serve chilled or at room temperature.
