Roadside Eats: Piki Bread

Recently, I drove through an area of the Southwest I’d never been in before — Highway 264 in Arizona, which travels through the Hopi Reservation. While I could have driven I-40, I opted for the more scenic route, and I’m glad I did because I got to try this.

Piki bread (which if it hasn’t already been partially eaten like this piece) comes in the shape of a rolled tube and is made up of about 3 or 4 very thin layers stacked together. It’s made from blue corn mixed with juniper ash and water to form a thin batter. The layers are cooked on a flat surface.

If you, like I do, love the taste of blue corn, you would enjoy this.
