Preparation of the recipe

  1. Empty the eggplant pulp leaving 8-10 mm thick around the skin.

  13. Finally, add the rice. Set the mixture aside.
  14. Heat the oven to 175-180º C (350 F).
  15. Stuff the eggplants with the rice and vegetable mixture.
  16. Put them in a baking dish.
  17. Sprinkle grated cheese on top.
  18. Put the eggplants in the oven for 30-35 minutes, until the skin is tender and the cheese has browned.
  19. Remove the eggplants stuffed with rice from the oven and serve hot.
