This smoothie recipe was born out of my love for watermelon, an excess of red leaf lettuce, and a influx of fresh picked strawberries. The lettuce came from a local produce club that needed to give it away for free. I had more red leaf than I knew what to do with and I refused let any of it go to waste. This Watermelon Cucumber Cooler is perfect as a summer breakfast or a late night pick me up. Raw honey and a pinch of sea salt balance out the flavors perfectly.
Watermelon Cucumber Cooler
Ingredients
1/2 cup coconut water
1 TSP honey
pinch of sea salt
1 1/2 cup watermelon, cubed
1 cup red leaf lettuce greens
1/2 cucumber sliced into six pieces
1/2 cup fresh frozen strawberries
5-6 cubes of ice
Directions
1. Add ingredients to blender and blend until combined into a slush like consistency. Serve immediately.
