Recipes for Free: Vanilla Chia Pudding W/pecans & Maple Syrup

Photo1I tastespotted this recipe for Triple Berry Chia Pudding and immediately added it to my Pinterest. I’ve been on a chia seed kick for a few months now adding it to any and everything that I can. The beauty of chia seeds is their ability to expand and thicken making them perfect for puddings. Check out my adapted recipe below.

Vanilla Chia Seed Pudding adapted from Skinnytaste’s Triple Berry Chia Pudding recipe
1 cup unsweetened almond/coconut milk beverage (Blue Diamond)
3 tablespoons chia seeds
3 heaping tablespoons Mori-Nu Vanilla pudding
5-6 drops Nu-Naturals liquid stevia (or sugar/honey to taste)
1/4 cup pecans (for garnish)
2 tablespoons maple syrup to drizzle
1.    Combine the almond-coconut milk together with the chia seeds and fruit in a glass jar with a lid. Cover and shake well, set aside for 15 minutes. Stir in dry pudding. Give it another good shake then refrigerate overnight or at least 5-6 hours.
2.    Serve with pecans and maple syrup drizzled on top. Enjoy
