Recipes for Free: Spicy Cabbage Soup

My version of the ever popular “diet” or slimming cabbage soup. My version has a slight kick to it but you can omit the red pepper is heat is not your thing.  Add brown rice, lentils, quinoa, or even diced sweet potato to this broth based soup to give it more body and flavor.

Spicy Cabbage Soup
1/2 small cabbage, sliced thin
3 celery stalks, finely diced
1 cup shredded carrot
1 medium tomato, diced
1 small onion, diced
3 tablespoons minced garlic
2 tablespoons crushed red pepper
2 tablespoons apple cider vinegar
1 tablespoons olive oil
6  cups veggie broth
2 cups water
2 tablespoons organic brown sugar
To taste: sea salt, onion and garlic powder, onion flakes, black pepper

  1. Coat a medium stock pot with olive oil over medium heat. Add onions, garlic, carrots, tomato and cabbage. Season well and sauté until tender for about 15 minutes. Add cider vinegar and red pepper flakes.
  2. Add veggie broth, and water stirring constantly. Cover and lower heat for another 25-30 minutes. Add brown sugar and additional seasonings to taste.
