Beet and Cream BarsIf you love my Roasted Beets & Strawberry Juice then you will love these vegan frozen treats that I created with the juice. Who knew beets could serve as dinner and dessert. Check out the recipe below.

Beets & Cream Frozen Bars

Ingredients

1 cup roasted beet juice
1/2 cup frozen strawberries
1 cup unsweetened almond milk
1 container plain almond yogurt

Directions

1. Blend beet juice + frozen strawberries in a blender or Nutribullet. Pour into a glass. Set aside.
2. Rinse out blender, combine almond milk and yogurt and blend until smooth.
3. Fill 4 popsicle molds 1/4 of the way with beet juice. Add yogurt mixture until molds are filled.
4. Freeze overnight.
