These Roasted Garlic Potato Puff Corn Cakes are a cross between a hush puppy and a corn muffin. They are also delicious. Inspired by and featuring Alexia’s new Roasted Garlic Potato Puffs I whipped these puppies up for one of my #TGIF splurge dinners. 
These savory corn cakes have just the right blend of garlic, onion, salt, and pepper + the addition of the potato puffs give them an extra kick of awesome.
