Winter Warmer Recipe
It’s getting colder now and getting more expensive to heat our homes, so what better (and greener) way to keep warm that a big bowl of home-made soup? This soup uses kitchen cupboard ingredients and is simple to make.

In the meantime, it’s the perfect excuse to make a delicious bowl of winter soup – one of my best tips for keeping warm and cosy.
Soups are a great warming meal as well as cheap to make, often using spare vegetables – so good for the purse and the environment. This soup is easy to make and you can have a freshly prepared lunch in half an hour with extra serving to keep in the freezer as well. So get the soup on, put your fluffy socks on and snuggle up on the couch.
The recipe serves four people.
Print Yum Recipe: Winter Warmer Soup – Beetroot, Carrot and GingerIngredients
- 1 large onion, chopped
- 3 medium beetroot, peeled & diced
- 2 large carrots, diced
- 25g fresh ginger, peeled & grated
- juice of 1 orange
- 1.2 l veg stock
Instructions
- Heat one tablespoon of oil in a pan.
- Add onion and fry until soft.
- Add the beetroot, carrot and ginger.
- Stir.
- Add the orange juice and stock.
- Season with salt and pepper.
- Bring to the boil and then simmer.
- Reduce the heat and simmer until the veg is tender.
- Blend until smooth.
- Serve
