We were asked by Flava It to unleash our meat lust with their range of quick marinades.
A collection of flavours arrived and we were stumped, it’s all pulled pork isn’t it? So we wondered what to do that would be different. No chicken, no pulled pork…so we went for…….
meatloaf!
Now this is something we’d never made before. Not really a British dish, so we thought we’d give it a go…
We decided on some Louisiana BBQ for some sweet ‘n’ spicyness.
Ingredients:-
1 lb (450 g) minced beef
1 lb (450 g) minced pork
2 medium onions, chopped
2 cloves garlic, peeled and chopped
1 large egg
3 oz (75 g) bread made into breadcrumbs.
1 medium sized carrot
1 green bell pepper
1 tablespoon of chopped red jalepenos
salt and black pepper
Directions:-
Pre-heat your oven to gas mark 2, 300°F (150°C).
Add your meat to a large food processor and blitz until it looks like a mushy mess! Add the Flava-it sachet. Then add the onions and carrot together until they are very finely chopped. Remove the blade from your processor and add your green pepper, jalepenos, egg and breadcrumbs. Mix the ingredients together.
Remove from processor and add to a loaf tin, or as we did a shallow dish.
If you don’t have a food processor. Mince the onion and chop the garlic finely then mix everything thoroughly in a large bowl. Add the mixture to your cooking tin.
Cover the tin with foil and place into pre-heated oven.
Using a shallow dish, our meatloaf cooked in under an hour. If using a loaf tin, you should expect the loaf to cook in around 2 hours.
Served with some fried aubergine and a home made salsa. (And cheese added later!) Delicious if I may say so myself!
The meatloaf kept in the fridge for a couple of days and livened up an omelet for lunch the next day as well – who’d have thought a BBQ omelette?!
