Warming vegetable and lentil soup mix from Scotty Brand
After slaving away over a hot stove this Christmas probably the last thing you really want to do is prep more veg! Our chums at Scotty Brand have it sorted - pre-prepared veggies and lentils included in their ready to make soup bag! Grab a bag and using some cupboard ingredients you'll soon have some homemade soup. January is also handily National Soup Month.
Results from a pan-Scotland survey revealed that the top winter warmer was lentil soup (30%), closely followed by Scotch Broth (18%) and Cream of Tomato (15%) with 75% of the nation choosing soup as their meal of choice at least once a week.
Ingredients1 tablespoon olive oil
1 pack of Scotty Brand Vegetable and Lentil soup mix
1-litre stock (Vegetable or Ham)
Heat a splash of oil in a large saucepan.
Cook the soup mix (remove lentils and set aside for later) until softened.
Once the vegetables are soft, add the lentils.
Add the stock and bring to the boil.
Reduce the heat and simmer, uncovered for about 15 minutes or until vegetables and lentils are tender.
Season to taste with salt and freshly ground pepper.
