The weather’s chillier, tailgate season is in full swing…time for some good ol’ comfort food! My brother and his family recently moved down here to So Cal, and it’s been so much fun getting together with them to watch college football (Go Bruins!). On one particular game day, he and his wife made lamb sliders with a delish yogurt cucumber sauce, and I made sure to take careful notes (and photos — yes, they laughed at me!)…

LAMB SLIDERS WITH GOAT CHEESE
& YOGURT CUCUMBER SAUCE

Makes 6-8 sliders; Prep 20 mins.; Cook 10 mins.

Meat:

  • 1 lb. ground lamb
  • 1 egg
  • 1 tablespoon cream
  • 1/4 teaspoon cumin
  • 1/4 teaspoon coriander
  • 1/4 teaspoon paprika
  • 1/4 teaspoon thyme
  • 1/2 cup panko bread crumbs (optional)

Sauce:

  • 1 cup greek yogurt or plain yogurt
  • 1/2 cucumber, de-seeded and chopped
  • 2 tablespoons olive oil
  • 1 tablespoon chopped mint
  • 1/2 teaspoon salt

Sliders:

  • King’s Hawaiian sweet rolls
  • Goat cheese
  • Arugula

Preparation:

Mix sauce ingredients in a bowl. Set aside (can be made ahead and refrigerated).

Knead meat ingredients together in a bowl. Heat a grill or griddle, and shape sliders into desired size. Grill each side until browned. At the very end, top each patty with a dollop of goat cheese.

Assemble sliders with a patty on each sweet roll, a spoonful of yogurt cucumber sauce and arugula.

Pair with your favorite beer or a glass of Syrah. Enjoy!
