Recipe: Egg and Hash Brown Pie

Breakfast, the only meal all four members of my family will happily eat anytime of the day. When I stumbled upon this recipe on Allrecipes.com, I knew I wanted to test it out. My family was obsessed! So much so, that this was just enough food for us, but I quickly realized two things; 1) I'd be making this again and tweeting the ingredients & 2) I would have to double the recipe next time. I took photos after my first attempt, but read through until the end. I have made this a few times since and I have a few tips and alterations that are helpful when recreating! Here is what you'll need: 
Ingredients: 
-6 slices bacon (I used uncured, gluten free)-5 eggs (I used organic, local, free-range)-1/2 cup milk (organic)-3 cups frozen hash brown potatoes, thawed (organic)-1/3 cup chopped green onions (organic)1 1/2 cups shredded cheddar cheese, divided (organic)

Directions:
1) Place bacon in a large, deep skillet. Cook over medium heat, drain, crumble, and set aside. 
2) Preheat oven to 350 degrees. Lightly grease a 7x11 baking dish. (I used a larger glass dish)
3) In a large bowl, beat together the eggs and milk. Stir in the bacon, hash browns, green onions, and 1 cup shredded Cheddar cheese. Pour into the prepared baking dish.
4) Bake in the preheated oven 25 to 35 minutes, or until a knife inserted in the center comes out clean. Sprinkle the remaining Cheddar cheese on top, and continue baking for 3 to 4 minutes, or until eh cheese is melted. Remove from oven, and let sit 5 minutes before serving.

Such a crowd pleaser! My kids asked that I make it once a week over summer break, so I actually have made it twice since. It definitely works best if you crisp the bacon before you start, also, I have read that if you brown the hash browns prior, that's pretty good. I only do the bacon before as I don't feel like the potatoes taste bad this way. Just your preference I guess on that one. 

I switched out the green for yellow onions, doubled the eggs and hash browns, added green peppers and spinach, and topped it with tomatoes, avocado, and sriracha sauce. Now that is one yummy pie that had a great blue print to build off of. I wonder what it will be next time I make it?
