Recipe: Crustless Quiche

I was recently on a quest to find a recipe for a crustless quiche. My mom made one that was out of this world, and I couldn't stop thinking about it in the weeks that followed. The day I went shopping, she was already at work and I didn't want to wait to get the recipe, so I used my best friend Google to find a similar one. I used the recipe I found on Allrecipes, but tweaked it a bit to fit my family's tastes.
Ingredients:1 tablespoon extra virgin olive oil1/2 onion, chopped1 (10 oz) package frozen chopped spinach, thawed and drained 6 eggs, beaten3 cups shredded cheese of choice1/4 teaspoon salt1/8 teaspoon ground black peppergarlic scapes (I chopped up 2 to add. Fresh from my farmers market & wanted to use!)

Directions:
-Preheat oven to 350 degrees. Lightly grease a 9 inch pie pan.-Heat oil in a large skillet over medium-hight heat. Add onion and garlic and cook, stirring occasionally, until onion are soft. Stir in spinach and continue cooking until excess moisture has evaporated.-In a large bowl, combine eggs, cheese, salt, & pepper. Add spinach mixture and stir to bland. Scoop into prepared pie pan.-Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

The quiche turned out so yummy! I did not wait the entire 10 minutes for it to cool, and I can see how that would have been better to do. ;) The entire family could not get enough and it was very filling. I can't wait to make this recipe again!

I also set up a juice & mimosa bar. This part was a major crowd pleaser. My kids loved "taste testing" the different juices and who doesn't love a fun straw? Who says you can't go all out for just your family? Obviously the quiche and juice bar would be perfect for a group brunch for family gathering as well.
