Serves 6Ingredients-Mushrooms- 6-8Onion- 1Pepper- 1Asparagus- a bunch(Optional)Panchetta/ham- to tastePasta- 75g/personcreme fraiche/cream- to taste(optional) Tinned tomatoesCut the asparagus into 2 inch pieces and boil them in salted water for 2 mins, then drain them and run the under cold waterThen put all the ingredients including the boiled asparagus into a frying pan.
At the same time put your pasta on to cook (75g per person). Boil the pasta in salted water for approx. 15 mins (until it is cooked!).
Add creme fraiche/cream to the pan with the vegetables ( and tinned tomatoes if you want a tomato sauce).Drain the pasta and add it to the veg mix and serve. Delicious! ( If I say so myself!)Laura x
