{Recipe} Armenian Nutmeg Cake

Tucked into the back of my recipe book, I found a gem – the recipe for an Armenian Nutmeg Cake. The recipe was given to me about 8 years ago by a work friend. I have tried to find the original source and even though many similar recipes show up in my search results, none are quite as easy to make as this.

This recipe is so simple and so delicious. I made this for mom for Mother’s Day.

1 cup plain flour
1 cup self-raising flour
2 cups tightly packed brown sugar
4 oz (115g) butter, softened
1 egg
1 cup milk
1 1/2 tsp nutmeg

* Pre-heat oven to 180˚c
* Cream butter and flours until mixture resembles breadcrumbs, then add brown sugar
* Press 1/4 of this mixture into the base of a round deep baking tin until hard

* Beat the egg and nutmeg into the milk and add it to the rest of the mixture. Mix thoroughly.

* Pour mixture over the base, then place into the oven for an hour or until a skewer comes at clean from the center (it took 50 minutes in my oven).

I’m not entirely sure what makes this cake ‘Armenian’ but the crunchy base and the subtle nutmeg flavor is certainly to all of our liking here in Sydney!
