My meal plan this week is short and sweet. The unrelenting heat has sapped my energy, and consequently there is no freezer cooking to speak of. On the up side, I did manage to donate a box of frozen prawns leftover from Christmas to dad, so there is now more space in the freezer when I am ready to cook again.
This week we ate:
Sunday
Spaghetti with chilli and garlic.
A super fast dinner. Whilst the pasta is cooking, crush two cloves of garlic and finely chop a small chilli. When the pasta is almost ready, gently heat about 1/4 cup olive oil in small fry pan. Add the garlic and chilli, and fry for about 1 minute. Drain the pasta, reserving a little of the cooking water. Put the pasta back into the cooking pot and pour over the infused oil. Add a little of the reserved cooking water if the pasta seems a bit dry. Season with salt and pepper, and serve with lots of freshly grated Parmesan.

Proper Chicken Caesar Salad from Jamie at Home.
Tuesday
Lemon Feta Zucchini Noodle SaladWednesday
Quick Fish Curry, served with jasmine rice.
Thursday
Easy Dukkah-Spiced Lamb Koftas, served with cous cous and Greek Salad from Jamie's 15 Minute Meals.
