Quinoa Salad with Avocado and Chickpeas
A delicious and healthy quinoa salad packed with protein and fresh flavors. Perfect for a light lunch or a side dish for dinner.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

In a medium saucepan, combine quinoa and water


Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed


In a large bowl, combine cooked quinoa, chickpeas, avocado, cherry tomatoes, red onion, and cilantro


In a small bowl, whisk together olive oil, lemon juice, salt, and pepper


Pour over the quinoa mixture and toss to combine


Serve immediately or refrigerate for a refreshing chilled salad
