Quick and Easy Fish Stew

I adapted this great fish stew recipe from here and it came out so well I decided to share!

Quick and Easy Fish Stew Recipe

Ingredients

  • 4 Tbsp olive oil
  • 1 cup of chopped onions

    chopped onions, carrots and celery

  • 3 large garlic cloves, chopped
  • 1/2 cup fresh parsley, chopped
  • 1 cup diced tomato
  • 2 teaspoons tomato paste
  • 8 oz of clam juice
  • 1/2 cup dry white wine (I used chradonnay)
  • 1 1/2 lbs fish fillets cubed (I used 2 tilapia filets)

  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/4 cup green peppers (optional)
  • 1 tsp chilli powder
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp lemon pepper
  • 1 tsp salt
  • 1/2 tsp pepper

this is the clam juice I used

Directions

  1. Heat oil in llarge pot or Dutch oven over medium-high heat. Add onion, garlic, carrotts, celery, and peppers and sauté´until onions are clear.
  2. Add tomato and tomato paste and gently cook for 10 minutes or so.
  3. Add clam juice, white wine,fish, simmer until fish is cooked through, less than 10 minutes.
  4. Add paresley and the rest of the seasonings.
  5. Serve immediately, or refrigerate overnight
