I have a love for beets of the golden variety, not to be confused with red beets. As my friend at Blissful Happenings would say… “They have a more earthy flavor”. Well I think red beets taste like dirt. Yes, I am aware that root vegetables are grown in the ground. I thought I hated beets…. until I tasted a perfectly roasted “golden” one.
