I don't think I ever tried making pretzel so
when Bake Along's theme was Pretzel, I wanted to join in the fun. On Pinterest, there are so many wonderful recipes that I seriously don't know which one to choose from.I think by far, the most popular with be the Auntie Annie's Copycat recipes but there were so many versions to choose from and I wasn't really into research mood. In the end, I took from Kari's cooking.
Findings: It is chewy and soft when hot but on the other hand, it is also "hard" once cool.
I was trying to replicate chocolate mint. My mint was not very intense. I think next time, I will add in more polo mint to it. Also I blitz the chocolate too powder and ended up with this pale chocolatey look. Source: Kari's Cooking
What you need:
1½ cups water1¼ tsp active dry yeast 2 tbsp brown sugar1¼ tsp salt135g bread flour422g flour
Soda water bath
2 cups warm water2 tbsp baking soda
Coating
Melted butter
Cocoa powderCastor sugarMint powder
Method:
Mix sugar with lukewarm water until dissolved.Sprinkle yeast on sugar water and stir to dissolve. Set aside until it foams.Add flour and salt.knead dough until smooth and elastic. Cover with cling wrap and set it in a warm place to proof for at least 1/2 hour.While dough is rising, prepare a baking soda water bath with 2 cups really warm water and 2 tbsp baking soda. Stir often.After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape.
Dip pretzel in soda solution and place on greased baking sheet.Allow pretzels to rise again.Bake in oven at 200 deg for about 10 minutes or until golden.Brush with melted butter.
Dip into the coating powder. Coat well and remove.Serve hot
