Popular Recipes, the No Garlic No Onions Way: Caesar Dressing

The salad’s creation is generally attributed to restauranteur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States. Cardini was living in San Diego but also working in Tijuana where he avoided the restrictions of Prohibition. His daughter Rosa (1928–2003) recounted that her father invented the dish when a Fourth of July 1924 rush depleted the kitchen’s supplies. Cardini made do with what he had, adding the dramatic flair of the table-side tossing “by the chef.” A number of Cardini’s staff have said that they invented the dish.

Julia Child said that she had eaten a Caesar salad at Cardini’s restaurant when she was a child in the 1920s. The earliest contemporary documentation of Caesar Salad is from a 1946 Los Angeles restaurant menu, twenty years after the 1924 origin stated by the Cardinis.

A traditional Caesar salad is a salad of romaine lettuce and croutons dressed with parmesan cheese, lemon juice, olive oil, egg, Worcestershire sauce, garlic, and black pepper; but we at NGNO have different ways of preparing the dressing to avoid the use of garlic.

Anchovies Caesar Dressing:

  • 1/2 cup of Olive Oil
  • 1/4 cup of White Vinegar
  • 5 tbsp of grated Parmesan Cheese
  • 1/2 tbsp of Worcestershire Sauce
  • 5 tbsp of Lemon Juice
  • 3 Anchovies
  • 1 tbsp of ground pepper
  • A pinch of Salt

Directions:

Blend all ingredients in Blender and refrigerate until ready to use.

Dijon Caesar Dressing:

  • 8 tbsp of Grated Parmesan Cheese
  • 2 tsp of Worcestershire Sauce
  • 6 minced Anchovies
  • 1 cup of Mayonnaise
  • 2 tsp of French Dijon Mustard
  • 1/2 tsp of Cayenne Pepper
  • A pinch of salt

Directions:

Mix all ingredients together in a bowl and refrigerate until ready to use.

Raspberry Caesar Dressing:

  • 1/2 cup of Olive Oil
  • 2 tbsp of Raspberry Vinegar
  • 1 tsp of Grated Parmesan Cheese
  • 1 tsp of Worcestershire Sauce
  • 2 minced Anchovies
  • 2 tbsp of Mayonnaise
  • 1 tbsp of Traditional Wholegrain Mustard
  • 1/2 cup of fresh raspberries
  • 1 tsp of Ground Black Pepper
  • A pinch of salt

Directions:

Blend all ingredients in Blender and refrigerate until ready to use.

Read your site plus various recipes. It's not nice to profess a NGNO regime and at the same time give recipes with Worchestershire sauce as one of the items. "W" sauce contains garlic extract. Had I not known that, and had I carelessly followed your recipe, I would have become violently ill. Thanks for SFA. d

So does commercially prepared mayonnaise. (Contain both garlic and onion)

Umm... The only problem is that Worcestershire sauce has garlic in it...
